Shipboard hygiene
Communicable-disease + gastroenteric-outbreak + potable-water hygiene management onboard — the routine practices that stop a single illness becoming a fleet-wide outbreak.
Why it matters
A single norovirus case on a cargo ship becomes a fleet-wide crew-change disruption in days; on a passenger ship it's an outbreak that closes voyages + triggers PSC + WHO IHR 2005 notification. Legionella outbreaks in ship potable-water systems have killed crew + passengers. Salmonella from raw-food handling has ended careers. The controls are unglamorous but the failure modes are severe.
Common hazards
- Cross-contamination in the galley (raw + cooked food + inadequate hand washing).
- Legionella in the potable-water system (stagnation, insufficient chlorination, low water temperature).
- Norovirus + gastroenteric spread via shared handles + surfaces + inadequate isolation of ill crew.
- Rodent + insect infestations in stores or accommodation.
- Inadequate cleaning of the messroom + heads + accommodation.
- Inadequate laundry temperature control (parasites + bacteria persist below 60°C).
Practical checklist
- Galley: separate boards + knives for raw + cooked; hand-wash station + hot-water at every prep station.
- Potable water: chlorination residual monitored + logged daily; monthly biological testing where possible.
- Ill-crew isolation: dedicated cabin + separate crockery + laundering procedure documented in the SMS.
- Accommodation cleaning: daily messroom + heads + hourly high-touch surface disinfection during outbreaks.
- Laundry: minimum 60°C wash cycle documented in the SMS.
- Pest control: monthly rodent + insect inspection; documented in the Deratting Record.
- MLC A3.2 galley + food-service inspections: monthly, signed by Master.
Mistakes to avoid
- Treating hygiene as a domestic task rather than a safety-critical control.
- Continuing an ill crew member on food-handling duty because "we're short-staffed".
- Skipping the Deratting Record because the vessel "doesn't have rats" — the record documents the check, not the presence.
